Designed as a batch pre-mixed that's packed full of tastes of the festive period, making it excellent for your festive gathering. Save the extra cordial for breakfast cocktails, puddings, or for additional servings of bikinis.

Makes enough for 10 guests
Ingredients for the Clementine Cordial (makes 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g granulated sugar
To make the Cocktail (makes 850ml, serving 10)
400ml good quality vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing
Directions
To prepare the Cordial: Put every items inside a saucepan, bring to a simmer, agitating until the sugar dissolves. Next, turn off the burner and leave to cool down completely. Transfer to a clean bottle, close it and store in the fridge, it will last for around four weeks.
Preparing the Cocktail Base: Pour the specified liquid ingredients into a large bottle, let it rest for one hour, then pass it through , ideally through cheesecloth, so it's fully clarified.
When ready to serve: Pour 85ml of the batch mix into your cocktail shaker filled with ice, gently stirring lightly for a minute to chill. Filter into an cold coupe glass or similar, decorate with a few cranberries and finish using a quick spritz of the essential oil over the drink.
